Ingredients

  • mung bean flour - 100 grams

  • scallions - 2, finely chopped

  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • oil - 2 tablespoons (for frying)
  • soy sauce - for dipping (optional)
  • sesame oil - for drizzling (optional)

Steps

  1. In a mixing bowl, combine the mung bean flour, water, chopped scallions, grated ginger, salt, and black pepper. Mix until you have a smooth batter.
  2. Let the batter rest for about 10 minutes to thicken slightly.
  3. Heat 1 tablespoon of oil in a non-stick frying pan over medium heat.
  4. Pour half of the batter into the pan, spreading it evenly into a round shape.
  5. Cook for about 3-4 minutes or until the bottom is golden brown, then flip and cook for another 3-4 minutes until both sides are cooked through.
  6. Remove the pancake and keep it warm while you repeat the process with the remaining batter, adding more oil as needed.
  7. Slice the pancakes into wedges and serve hot with soy sauce and a drizzle of sesame oil, if desired.
