Steps
- In a mixing bowl, combine the mung bean flour, water, chopped scallions, grated ginger, salt, and black pepper. Mix until you have a smooth batter.

- Heat 1 tablespoon of oil in a non-stick frying pan over medium heat.
- Pour half of the batter into the pan, spreading it evenly into a round shape.
- Cook for about 3-4 minutes or until the bottom is golden brown, then flip and cook for another 3-4 minutes until both sides are cooked through.
- Remove the pancake and keep it warm while you repeat the process with the remaining batter, adding more oil as needed.
