Moo Shu Rice

Ingredients
- Jasmine rice - 1 cup (200g)
- Water - 2 cups (500ml)
- Vegetable oil - 2 tablespoons (30ml)
- Eggs - 2 large
- Shredded carrots - 1/2 cup (50g)
- Shredded cabbage - 1/2 cup (50g)
- Mushrooms, chopped - 1/2 cup (50g)
- Green onions, sliced - 1/4 cup (25g)
- Soy sauce - 2 tablespoons (30ml)
- Sesame oil - 1 teaspoon (5ml)
- Salt - 1/2 teaspoon (2g)
- Black pepper - 1/4 teaspoon (1g)
- Cornstarch - 1 teaspoon (3g)
- Water (for cornstarch slurry) - 1 tablespoon (15ml)
Steps
- Rinse the jasmine rice under cold water until the water runs clear. Combine the rice and 2 cups of water in a pot, bring to a boil, then cover and reduce to low heat. Cook for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered.
- In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the shredded carrots, cabbage, and chopped mushrooms. Stir-fry for about 4-5 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet. Crack the eggs into the empty side and scramble until fully cooked. Mix the eggs with the vegetables.
- In a small bowl, combine the soy sauce, sesame oil, salt, black pepper, cornstarch, and 1 tablespoon of water to create a slurry. Pour this mixture over the vegetables and eggs, stirring well to combine and cook for an additional 2 minutes until thickened.
- Fluff the cooked rice with a fork and add it to the skillet. Mix everything together thoroughly and heat for another 2 minutes until everything is warmed through.
- Remove from heat, garnish with sliced green onions, and serve immediately.
