Ingredients

  • Jasmine rice - 1 cup (200g)
  • Water - 2 cups (500ml)
  • Vegetable oil - 2 tablespoons (30ml)
  • Eggs - 2 large
  • Shredded carrots - 1/2 cup (50g)
  • Shredded cabbage - 1/2 cup (50g)
  • Mushrooms, chopped - 1/2 cup (50g)
  • Green onions, sliced - 1/4 cup (25g)
  • Soy sauce - 2 tablespoons (30ml)
  • Sesame oil - 1 teaspoon (5ml)
  • Salt - 1/2 teaspoon (2g)
  • Black pepper - 1/4 teaspoon (1g)
  • Cornstarch - 1 teaspoon (3g)
  • Water (for cornstarch slurry) - 1 tablespoon (15ml)

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear. Combine the rice and 2 cups of water in a pot, bring to a boil, then cover and reduce to low heat. Cook for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered.
  2. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the shredded carrots, cabbage, and chopped mushrooms. Stir-fry for about 4-5 minutes until the vegetables are tender.
  3. Push the vegetables to one side of the skillet. Crack the eggs into the empty side and scramble until fully cooked. Mix the eggs with the vegetables.
  4. In a small bowl, combine the soy sauce, sesame oil, salt, black pepper, cornstarch, and 1 tablespoon of water to create a slurry. Pour this mixture over the vegetables and eggs, stirring well to combine and cook for an additional 2 minutes until thickened.
  5. Fluff the cooked rice with a fork and add it to the skillet. Mix everything together thoroughly and heat for another 2 minutes until everything is warmed through.
  6. Remove from heat, garnish with sliced green onions, and serve immediately.
