- Shiitake mushrooms - 100 grams, sliced
- Carrot - 1 medium, julienned
- Green onions - 3, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Lettuce leaves - 8 large, for wrapping
- Cilantro - 2 tablespoons, chopped (optional)
Steps
- Heat a non-stick skillet over medium heat and add sesame oil.
- Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
- Add the sliced pork to the skillet and cook until browned, about 5-7 minutes.
- Stir in the shiitake mushrooms, carrot, and chopped green onions, cooking for an additional 3-4 minutes until the vegetables are tender.
- Push the pork and vegetable mixture to one side of the skillet, pour the beaten eggs into the other side, and scramble until just set.
- Combine the pork, vegetables, and scrambled eggs, then add soy sauce, rice vinegar, and black pepper, mixing well to combine and heat through for another 2 minutes.
- Remove from heat and let cool slightly before serving.
- To serve, spoon the Moo Shu pork mixture onto lettuce leaves, top with chopped cilantro if desired, and wrap them up to enjoy.
