  • Pork tenderloin - 200 grams, thinly sliced

  • Shiitake mushrooms - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Green onions - 3, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Lettuce leaves - 8 large, for wrapping
  • Cilantro - 2 tablespoons, chopped (optional)

Steps

  1. Heat a non-stick skillet over medium heat and add sesame oil.
  2. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
  3. Add the sliced pork to the skillet and cook until browned, about 5-7 minutes.
  4. Stir in the shiitake mushrooms, carrot, and chopped green onions, cooking for an additional 3-4 minutes until the vegetables are tender.
  5. Push the pork and vegetable mixture to one side of the skillet, pour the beaten eggs into the other side, and scramble until just set.
  6. Combine the pork, vegetables, and scrambled eggs, then add soy sauce, rice vinegar, and black pepper, mixing well to combine and heat through for another 2 minutes.
  7. Remove from heat and let cool slightly before serving.
  8. To serve, spoon the Moo Shu pork mixture onto lettuce leaves, top with chopped cilantro if desired, and wrap them up to enjoy.
