Ingredients

  • Pork tenderloin - 200 grams, thinly sliced
  • Eggs - 2 large, beaten
  • Shiitake mushrooms - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Green cabbage - 100 grams, shredded
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce (kosher) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Hoison sauce - 1 tablespoon
  • Moo Shu pancakes - 4, store-bought or homemade

Steps

  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the sliced pork and stir-fry until browned and cooked through, about 4-5 minutes.
  2. Remove the pork from the pan and set it aside. In the same pan, add another tablespoon of vegetable oil and add the minced garlic, shiitake mushrooms, carrot, and cabbage. Stir-fry for about 3-4 minutes until the vegetables are tender.
  3. Push the vegetables to one side of the pan and pour in the beaten eggs. Scramble the eggs until fully cooked, then mix them with the vegetables.
  4. Return the cooked pork to the pan. Add the soy sauce, hoisin sauce, sesame oil, and cornstarch. Stir everything together and cook for another 2-3 minutes, allowing the flavors to meld.
  5. Add the chopped green onions and stir well. Remove from heat.
  6. Warm the Moo Shu pancakes according to package instructions. Serve the pork and vegetable mixture in the pancakes, folding them like a wrap.
