Ingredients

  • Boneless, skinless chicken breast - 250 grams, thinly sliced

  • Green cabbage - 150 grams, shredded
  • Carrot - 100 grams, julienned
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Green onions - 3 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce (low sodium) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Pancakes (Chinese-style) - 4 pieces

Steps

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced chicken breast, season with salt and pepper, and stir-fry until cooked through, about 5-7 minutes.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add garlic and ginger, sauté for about 30 seconds until fragrant.
  5. Add the shredded cabbage, julienned carrots, and sliced mushrooms to the skillet, stir-frying for about 5 minutes until the vegetables are tender.
  6. Push the vegetables to one side of the skillet and pour in the beaten eggs on the other side, scrambling them until fully cooked.
  7. Combine the chicken back into the skillet with the vegetables and eggs.
  8. Add soy sauce and sesame oil, mixing everything together until well combined and heated through, about 2-3 minutes.
  9. Warm the pancakes according to package instructions.
