Ingredients

  • Chicken breast - 200 grams, thinly sliced
  • Egg - 1 large, beaten
  • Mushrooms - 100 grams, sliced
  • Cabbage - 100 grams, shredded
  • Carrot - 50 grams, julienned
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons (use kosher-certified)
  • Sesame oil - 1 tablespoon
  • Canola oil - 2 tablespoons
  • Rice vinegar - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Moo Shu pancakes or tortillas - 4 pieces

Steps

  1. In a bowl, combine the sliced chicken with 1 tablespoon of soy sauce, sesame oil, salt, and black pepper. Marinate for 15 minutes.
  2. Heat 1 tablespoon of canola oil in a large pan over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  3. In the same pan, add the remaining tablespoon of canola oil. Add the garlic, ginger, mushrooms, cabbage, and carrot. Stir-fry for about 5 minutes until the vegetables are tender.
  4. Push the vegetables to the side of the pan, pour in the beaten egg, and scramble until fully cooked.
  5. Return the cooked chicken to the pan, add the remaining tablespoon of soy sauce and rice vinegar, and mix everything together. Stir-fry for an additional 2-3 minutes.
  6. Serve the Moo Shu Chicken hot, wrapped in warm Moo Shu pancakes or tortillas, and garnish with chopped green onions.
