Ingredients
- Lamb shoulder - 250 grams, thinly sliced
- Basmati rice - 150 grams
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Red bell pepper - 1, sliced
- Carrot - 1, julienned
- Green onion - 2, chopped
- Soy sauce - 3 tablespoons
- Oyster sauce - 1 tablespoon
- Brown sugar - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Water - 300 ml
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, bring 300 ml of water to a boil, add a pinch of salt, and the soaked rice. Reduce heat to low, cover, and simmer for 15 minutes until the rice is fluffy and all water is absorbed. Remove from heat and let it sit covered for another 5 minutes.
- While the rice is cooking, heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and grated ginger to the skillet, sauté for 30 seconds until fragrant.
- Add the sliced lamb to the skillet, stir-frying for about 5-7 minutes until browned and cooked through.
- Stir in the sliced red bell pepper and julienned carrot, cooking for an additional 3-4 minutes until the vegetables are just tender.
- In a small bowl, mix together the soy sauce, oyster sauce, brown sugar, and black pepper. Pour this sauce over the lamb and vegetables, stirring well to coat evenly. Cook for another 2 minutes.
- Fluff the cooked rice with a fork and serve it on plates topped with the lamb mixture. Garnish with chopped green onions.
