Ingredients

  • Gluten-free flatbread - 2 pieces
  • Ground lamb - 200 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Hoisin sauce - 1 tablespoon
  • Scallions - 2, thinly sliced
  • Red bell pepper - 1, thinly sliced
  • Carrot - 1 small, julienned
  • Cilantro - a handful, chopped
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  2. Add the ground lamb to the skillet, cooking until browned, approximately 5-7 minutes. Break it up with a spatula as it cooks.
  3. Stir in the soy sauce and hoisin sauce, mixing well to combine. Season with salt and black pepper to taste, then remove from heat.
  4. Meanwhile, preheat an oven to 220°C (428°F).
  5. Place the gluten-free flatbreads on a baking sheet. Evenly distribute the lamb mixture over each flatbread.
  6. Top the lamb with sliced red bell pepper, julienned carrot, and scallions.
  7. Bake in the preheated oven for 8-10 minutes until the edges of the flatbreads are crispy.
  8. Once baked, remove from the oven and sprinkle with chopped cilantro before serving.
