- Garlic - 2 cloves, minced

- Red bell pepper - 1 medium, sliced
- Green bell pepper - 1 medium, sliced
- Spring onions - 2, chopped
- Sesame oil - 1 tablespoon
- Cornstarch - 1 teaspoon
- Water - 100 milliliters
- Salt - to taste
- Black pepper - to taste
- Cooked brown rice - 150 grams (to serve)
Steps
- 1. Begin by slicing the lamb loin chops into thin strips and marinate them in a mixture of soy sauce, oyster sauce, honey, minced garlic, grated ginger, salt, and black pepper for at least 15 minutes.
- 2. While the lamb is marinating, prepare the vegetables by slicing the red and green bell peppers and chopping the spring onions.
- 3. Heat sesame oil in a large skillet or wok over medium-high heat.
- 4. Once the oil is hot, add the marinated lamb strips to the skillet and stir-fry for about 5-7 minutes, or until the lamb is browned and cooked through.
- 5. Add the sliced bell peppers and half of the spring onions to the skillet, stir-frying for an additional 3-4 minutes until the vegetables are tender-crisp.
- 6. In a small bowl, mix the cornstarch with water to create a slurry, then pour this into the skillet, stirring well to combine and thicken the sauce, cooking for another 2 minutes.
- 7. Taste and adjust seasoning with additional salt and pepper if needed.
- 8. Serve the Mongolian Lamb over cooked brown rice and garnish with the remaining spring onions.
