Ingredients

  • Lamb loin chops - 300 grams
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Honey - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Red bell pepper - 1 medium, sliced
  • Green bell pepper - 1 medium, sliced
  • Spring onions - 2, chopped
  • Sesame oil - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Water - 100 milliliters
  • Salt - to taste
  • Black pepper - to taste
  • Cooked brown rice - 150 grams (to serve)

Steps

  1. 1. Begin by slicing the lamb loin chops into thin strips and marinate them in a mixture of soy sauce, oyster sauce, honey, minced garlic, grated ginger, salt, and black pepper for at least 15 minutes.
  2. 2. While the lamb is marinating, prepare the vegetables by slicing the red and green bell peppers and chopping the spring onions.
  3. 3. Heat sesame oil in a large skillet or wok over medium-high heat.
  4. 4. Once the oil is hot, add the marinated lamb strips to the skillet and stir-fry for about 5-7 minutes, or until the lamb is browned and cooked through.
  5. 5. Add the sliced bell peppers and half of the spring onions to the skillet, stir-frying for an additional 3-4 minutes until the vegetables are tender-crisp.
  6. 6. In a small bowl, mix the cornstarch with water to create a slurry, then pour this into the skillet, stirring well to combine and thicken the sauce, cooking for another 2 minutes.
  7. 7. Taste and adjust seasoning with additional salt and pepper if needed.
  8. 8. Serve the Mongolian Lamb over cooked brown rice and garnish with the remaining spring onions.
