Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Soy sauce - 30 ml
  • Sesame oil - 15 ml
  • Garlic - 3 cloves, minced
  • Ginger - 1 tsp, grated
  • Ground black pepper - 1/2 tsp
  • Cumin - 1/2 tsp
  • Paprika - 1/2 tsp
  • Chili flakes - 1/4 tsp (optional)
  • Green onions - 2, chopped
  • Fresh cilantro - 2 tbsp, chopped
  • Lemon - 1, juiced

Steps

  1. In a bowl, combine soy sauce, sesame oil, minced garlic, grated ginger, black pepper, cumin, paprika, chili flakes, and lemon juice to create the marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for better flavor.
  3. Preheat your grill to medium-high heat. If using skewers, soak them in water for 30 minutes to prevent burning.
  4. Thread the marinated lamb onto the skewers, leaving a little space between each piece.
  5. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
  6. Once cooked, remove the skewers from the grill and let them rest for 5 minutes.
  7. Garnish with chopped green onions and fresh cilantro before serving.
