Ingredients

  • Chicken breast - 300 grams, sliced
  • Soy sauce (low sodium) - 4 tablespoons
  • Brown sugar - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Bell pepper (red or green) - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon
  • Water - 2 tablespoons

Steps

  1. In a bowl, combine the sliced chicken with 2 tablespoons of soy sauce and cornstarch. Mix well and let it marinate for about 10 minutes.
  2. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and stir-fry until it's golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, and sauté for about 30 seconds until fragrant.
  4. Add the sliced bell pepper and julienned carrot to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. Return the cooked chicken to the skillet. In a small bowl, mix the remaining 2 tablespoons of soy sauce, brown sugar, and water. Pour the sauce over the chicken and vegetables.
  6. Stir well to combine and cook for an additional 2-3 minutes until the sauce thickens slightly.
  7. Garnish with chopped green onions and sesame seeds before serving.
