- Chicken breast - 250 grams, thinly sliced
- Egg noodles - 150 grams
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 3 tablespoons
- Oyster sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Cornstarch - 1 teaspoon
- Sugar - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the egg noodles according to package instructions, drain, and set aside.
- In a bowl, mix the sliced chicken with cornstarch, soy sauce, and a pinch of salt and pepper. Let it marinate for 10 minutes.
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
- In the same pan, add the remaining tablespoon of vegetable oil. Add the minced garlic, grated ginger, and stir-fry for 30 seconds until fragrant.
- Add the julienned carrot and sliced bell pepper to the pan, stir-frying for 3-4 minutes until they are slightly tender but still crisp.
- Return the cooked chicken to the pan, add the cooked noodles, oyster sauce, sesame oil, and sugar. Toss everything together for 2-3 minutes until well combined and heated through.
- Garnish with chopped green onions before serving. Adjust seasoning with salt and pepper as needed.
