Ingredients

  • Chicken breast - 250 grams, thinly sliced
  • Egg noodles - 150 grams
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 3 tablespoons
  • Oyster sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Cornstarch - 1 teaspoon
  • Sugar - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the egg noodles according to package instructions, drain, and set aside.
  2. In a bowl, mix the sliced chicken with cornstarch, soy sauce, and a pinch of salt and pepper. Let it marinate for 10 minutes.
  3. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  4. In the same pan, add the remaining tablespoon of vegetable oil. Add the minced garlic, grated ginger, and stir-fry for 30 seconds until fragrant.
  5. Add the julienned carrot and sliced bell pepper to the pan, stir-frying for 3-4 minutes until they are slightly tender but still crisp.
  6. Return the cooked chicken to the pan, add the cooked noodles, oyster sauce, sesame oil, and sugar. Toss everything together for 2-3 minutes until well combined and heated through.
  7. Garnish with chopped green onions before serving. Adjust seasoning with salt and pepper as needed.
