Steps
- Start by marinating the mock fish fillets in a mixture of 1 tablespoon of black bean sauce, soy sauce, minced garlic, and minced ginger for 10 minutes.
- Heat 1 tablespoon of vegetable oil in a non-stick pan over medium heat, and sauté the marinated mock fish for about 3-4 minutes on each side until golden brown. Remove the mock fish from the pan and set aside.
- In the same pan, add the remaining tablespoon of vegetable oil, and add the sliced bell pepper, julienned carrot, and peas. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp.
- In a small bowl, mix the remaining 2 tablespoons of black bean sauce, cornstarch, and water to create a sauce mixture.
- Pour the sauce mixture into the pan with the vegetables, stirring well to combine. Cook for another 2-3 minutes until the sauce thickens.
- Add the cooked mock fish back to the pan, tossing gently to coat in the sauce. Cook for an additional 2 minutes to heat through.
- Drizzle with sesame oil and sprinkle with chopped green onions and fresh cilantro before serving.
