Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the eggplant lengthwise into 1.5 cm thick pieces and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
  3. In a small bowl, whisk together miso paste, maple syrup, soy sauce, rice vinegar, sesame oil, garlic, and ginger until smooth to create the glaze.
  4. Rinse the salted eggplant slices under cold water and pat them dry with paper towels.
