Steps
- Preheat your oven to 200°C (400°F).
- Slice the eggplant lengthwise into 1.5 cm thick pieces and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
- In a small bowl, whisk together miso paste, maple syrup, soy sauce, rice vinegar, sesame oil, garlic, and ginger until smooth to create the glaze.
- Rinse the salted eggplant slices under cold water and pat them dry with paper towels.
