Steps
- Preheat your oven to 200°C (400°F).
- Slice the eggplants in half lengthwise and score the flesh in a crosshatch pattern, being careful not to cut through the skin.
- In a bowl, combine the miso paste, soy sauce, maple syrup, sesame oil, minced garlic, and grated ginger to create the glaze.
- Place the eggplant halves on a baking sheet, cut side up, and brush the miso glaze generously over the flesh.
