Ingredients

  • Cod fillets - 300 grams
  • White miso paste - 2 tablespoons
  • Mirin - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Honey - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Fresh ginger, grated - 1 teaspoon
  • Garlic, minced - 1 clove
  • Green onions, sliced - 2 tablespoons
  • Sesame seeds, toasted - 1 tablespoon

Steps

  1. In a bowl, mix together the white miso paste, mirin, soy sauce, honey, sesame oil, grated ginger, and minced garlic to create the marinade.
  2. Place the cod fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  3. Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
  4. Remove the cod from the marinade and place it on the prepared baking sheet. Reserve the marinade for basting.
  5. Bake the cod in the preheated oven for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork, basting with the reserved marinade halfway through cooking.
