Ingredients
- Matzo meal - 1/2 cup
- Eggs - 2 large
- Vegetable oil - 2 tablespoons
- Water - 1/4 cup
- Salt - 1/2 teaspoon
- Ground black pepper - 1/4 teaspoon
- Chicken broth - 4 cups
- Fresh ginger - 1 tablespoon, minced
- Garlic - 1 clove, minced
- Scallions - 2, chopped
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Fresh cilantro - for garnish
Steps
- In a mixing bowl, combine matzo meal, eggs, vegetable oil, water, salt, and black pepper. Mix until a smooth dough forms.
- Cover the bowl with plastic wrap and refrigerate for about 30 minutes to allow the mixture to firm up.
- While the matzo mixture is chilling, bring the chicken broth to a boil in a large pot. Add minced ginger, minced garlic, and soy sauce. Reduce heat and let simmer.
- Once the matzo mixture is ready, wet your hands and form small balls (about 1 inch in diameter) from the mixture.
- Carefully drop the matzah balls into the simmering broth. Cover the pot and let them cook for about 20 minutes, or until they are cooked through and have expanded.
- Before serving, stir in chopped scallions and sesame oil into the soup. Adjust seasoning with salt and pepper if necessary.
- Ladle the soup into bowls, garnish with fresh cilantro, and enjoy!
