Ingredients

  • Matzo meal - 1/2 cup
  • Eggs - 2 large
  • Vegetable oil - 2 tablespoons
  • Water - 1/4 cup
  • Salt - 1/2 teaspoon
  • Ground black pepper - 1/4 teaspoon
  • Chicken broth - 4 cups
  • Fresh ginger - 1 tablespoon, minced
  • Garlic - 1 clove, minced
  • Scallions - 2, chopped
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. In a mixing bowl, combine matzo meal, eggs, vegetable oil, water, salt, and black pepper. Mix until a smooth dough forms.
  2. Cover the bowl with plastic wrap and refrigerate for about 30 minutes to allow the mixture to firm up.
  3. While the matzo mixture is chilling, bring the chicken broth to a boil in a large pot. Add minced ginger, minced garlic, and soy sauce. Reduce heat and let simmer.
  4. Once the matzo mixture is ready, wet your hands and form small balls (about 1 inch in diameter) from the mixture.
  5. Carefully drop the matzah balls into the simmering broth. Cover the pot and let them cook for about 20 minutes, or until they are cooked through and have expanded.
  6. Before serving, stir in chopped scallions and sesame oil into the soup. Adjust seasoning with salt and pepper if necessary.
  7. Ladle the soup into bowls, garnish with fresh cilantro, and enjoy!
