  • Coconut milk - 100 milliliters
  • Vanilla extract - 1 teaspoon
  • Cornstarch - 1 tablespoon
  • Water - 50 milliliters
  • Pinch of salt - 1

Steps

  1. In a blender, combine the silken tofu, matcha powder, maple syrup, coconut milk, vanilla extract, cornstarch, and a pinch of salt.
  2. Blend on high speed until the mixture is completely smooth and creamy.
  3. In a small saucepan, heat the water over medium heat until it is warm, then slowly pour it into the blender while blending to ensure everything is well mixed.
  4. Once fully blended, transfer the mixture back into the saucepan.
  5. Cook over low heat, stirring constantly, until the pudding thickens (about 5 minutes).
  6. Remove from heat and let it cool slightly before pouring it into serving bowls.
  7. Refrigerate for at least 2 hours to allow the pudding to set.
  8. Serve chilled, optionally garnished with a sprinkle of matcha powder or fresh fruits.
