- Erythritol - 3 tablespoons (36g)
- Egg yolks - 2 large
- Vanilla extract - 1 teaspoon (5ml)
- Gelatin powder - 1 teaspoon (3g)
- Water - 2 tablespoons (30ml)
Steps
- In a small bowl, dissolve the gelatin powder in 2 tablespoons of cold water and let it sit for about 5 minutes until it blooms.
- In a mixing bowl, whisk the egg yolks and erythritol together until they are pale and creamy.
- In a separate saucepan, heat the heavy cream over medium heat until it starts to simmer. Remove from heat and stir in the bloomed gelatin until fully dissolved.
