Ingredients

  • Dried shiitake mushrooms - 50g
  • Water - 250ml
  • Coconut aminos - 3 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Red pepper flakes - 1/2 teaspoon
  • Sesame seeds - 1 tablespoon

Steps

  1. Soak the dried shiitake mushrooms in 250ml of water for about 20 minutes until they are rehydrated and soft.
  2. Drain the mushrooms and slice them into thin strips.
  3. In a mixing bowl, combine coconut aminos, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes to create the marinade.
  4. Add the sliced mushrooms to the marinade and mix well to ensure they are fully coated.
  5. Cover the bowl and let the mushrooms marinate in the refrigerator for at least 10 minutes to absorb the flavors.
  6. Before serving, sprinkle chopped green onions and sesame seeds over the marinated mushrooms.
