- Scallions - 1, finely chopped
Steps
- Soak the dried seaweed in warm water for about 10 minutes until it expands and becomes tender. Drain and squeeze out excess water.
- In a mixing bowl, combine the sesame oil, rice vinegar, coconut aminos, minced garlic, and grated ginger. Whisk until well combined.
- Add the soaked seaweed, julienned carrot, and cucumber to the bowl. Toss everything together until the vegetables are well coated with the dressing.
- Let the salad marinate for at least 5 minutes to enhance the flavors.
- Before serving, sprinkle toasted sesame seeds and chopped scallions on top. Serve chilled or at room temperature.
