- Jasmine rice - 150 grams
- Firm tofu - 200 grams
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ginger - 1 inch, minced
- Sichuan peppercorns - 1 teaspoon, crushed
- Doubanjiang (chili bean paste) - 1 tablespoon
- Soy sauce - 2 tablespoons
- Vegetable broth - 250 milliliters
- Green onions - 2, chopped
- Cornstarch - 1 tablespoon
- Water - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook according to package instructions, usually about 15-20 minutes.
- While the rice is cooking, press the firm tofu to remove excess water and cut it into 1-inch cubes.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic, ginger, and crushed Sichuan peppercorns, sautéing until fragrant, about 1 minute.
- Add the doubanjiang and stir-fry for an additional minute to release its flavors.
- Carefully add the tofu cubes to the skillet and gently toss to coat with the sauce, cooking for 5-7 minutes until the tofu is slightly golden.
- Pour in the soy sauce and vegetable broth, then bring the mixture to a simmer.
- In a small bowl, mix the cornstarch with water to create a slurry. Slowly add the slurry to the tofu mixture while stirring gently, cooking for another 2-3 minutes until the sauce thickens.
- Stir in the chopped green onions, sesame oil, and season with salt and black pepper to taste.
- Serve the Mapo Tofu over the cooked jasmine rice, garnishing with additional green onions if desired.
