Ingredients

  • Pizza dough - 200 grams
  • Firm tofu - 200 grams, cubed
  • Sichuan peppercorns - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Doubanjiang (fermented broad bean paste) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Vegetable broth - 100 ml
  • Cornstarch - 1 tablespoon
  • Red bell pepper - 1, diced
  • Green onions - 2, chopped
  • Mozzarella cheese - 150 grams, shredded
  • Fresh cilantro - for garnish
  • Sesame oil - 1 teaspoon

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a pan, heat the vegetable oil over medium heat and add the Sichuan peppercorns, stirring until fragrant.
  3. Add the minced garlic and ginger, cooking for another minute until fragrant.
  4. Stir in the doubanjiang and cook for 1-2 minutes, then add the cubed tofu, soy sauce, and vegetable broth.
  5. Bring to a simmer and let cook for 5 minutes. Mix the cornstarch with a little water to create a slurry, then add it to the pan to thicken the sauce. Cook for an additional 2 minutes.
  6. Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking sheet or pizza stone.
  7. Spread the tofu mixture evenly over the dough, leaving a small border for the crust.
  8. Sprinkle the diced red bell pepper and shredded mozzarella cheese on top.
  9. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
  10. Once baked, remove from the oven and drizzle with sesame oil. Garnish with chopped green onions and fresh cilantro before slicing and serving.
