Ingredients
- Firm tofu - 200 grams
- Button mushrooms - 100 grams, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Spring onion - 2, finely chopped (white and green parts separated)
- Soy sauce - 2 tablespoons
- Doubanjiang (fermented chili bean paste) - 1 tablespoon
- Sesame oil - 1 tablespoon
- Cornstarch - 2 tablespoons
- Panko breadcrumbs - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2, vegan
- Lettuce leaves - 2
- Vegan mayonnaise - 2 tablespoons
Steps
- Press the firm tofu for 15 minutes to remove excess moisture, then crumble it into a bowl.
- In a skillet, heat sesame oil over medium heat and sauté the minced garlic, ginger, and the white parts of the spring onion until fragrant.
- Add the chopped mushrooms and cook until softened, about 5 minutes.
- Stir in the crumbled tofu, soy sauce, and doubanjiang, cooking for an additional 5 minutes while stirring frequently.
- Remove from heat and let the mixture cool slightly before adding cornstarch, Panko breadcrumbs, salt, and black pepper. Mix well until combined.
- Shape the mixture into two patties and refrigerate for 10 minutes to firm up.
- Heat a non-stick skillet over medium heat and cook the patties for about 4-5 minutes on each side until golden brown and heated through.
- Toast the burger buns lightly in the same skillet.
- Assemble the burger by spreading vegan mayonnaise on the bottom bun, placing a lettuce leaf, the Mapo tofu patty, and topping with the green parts of the spring onion. Finish with the top bun.
- Serve immediately.
