Ingredients

  • Firm tofu - 200 grams
  • Button mushrooms - 100 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Spring onion - 2, finely chopped (white and green parts separated)
  • Soy sauce - 2 tablespoons
  • Doubanjiang (fermented chili bean paste) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Panko breadcrumbs - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2, vegan
  • Lettuce leaves - 2
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. Press the firm tofu for 15 minutes to remove excess moisture, then crumble it into a bowl.
  2. In a skillet, heat sesame oil over medium heat and sauté the minced garlic, ginger, and the white parts of the spring onion until fragrant.
  3. Add the chopped mushrooms and cook until softened, about 5 minutes.
  4. Stir in the crumbled tofu, soy sauce, and doubanjiang, cooking for an additional 5 minutes while stirring frequently.
  5. Remove from heat and let the mixture cool slightly before adding cornstarch, Panko breadcrumbs, salt, and black pepper. Mix well until combined.
  6. Shape the mixture into two patties and refrigerate for 10 minutes to firm up.
  7. Heat a non-stick skillet over medium heat and cook the patties for about 4-5 minutes on each side until golden brown and heated through.
  8. Toast the burger buns lightly in the same skillet.
  9. Assemble the burger by spreading vegan mayonnaise on the bottom bun, placing a lettuce leaf, the Mapo tofu patty, and topping with the green parts of the spring onion. Finish with the top bun.
  10. Serve immediately.
