Ingredients
- ripe mango - 1 medium (about 200g)
- coconut milk - 100ml
- sugar - 30g
- agar-agar powder - 5g
- water - 200ml
- lemon juice - 1 tablespoon
- pinch of salt - to taste
Steps
- Peel and dice the ripe mango, reserving a few pieces for garnish if desired.
- In a blender, puree the diced mango until smooth.
- In a saucepan, combine water, sugar, and agar-agar powder. Stir well and bring to a boil over medium heat, stirring constantly until the agar-agar is fully dissolved.
- Once boiling, reduce the heat and stir in the coconut milk and lemon juice. Mix until well combined.
- Remove the saucepan from heat and add the mango puree. Stir until the mixture is uniform.
- Pour the mixture into serving bowls or molds and let cool to room temperature.
- Refrigerate for at least 2 hours or until set.
- Garnish with reserved mango pieces before serving.
