Ingredients

  • ripe mango - 1 medium (about 200g)
  • coconut milk - 100ml
  • sugar - 30g
  • agar-agar powder - 5g
  • water - 200ml
  • lemon juice - 1 tablespoon
  • pinch of salt - to taste

Steps

  1. Peel and dice the ripe mango, reserving a few pieces for garnish if desired.
  2. In a blender, puree the diced mango until smooth.
  3. In a saucepan, combine water, sugar, and agar-agar powder. Stir well and bring to a boil over medium heat, stirring constantly until the agar-agar is fully dissolved.
  4. Once boiling, reduce the heat and stir in the coconut milk and lemon juice. Mix until well combined.
  5. Remove the saucepan from heat and add the mango puree. Stir until the mixture is uniform.
  6. Pour the mixture into serving bowls or molds and let cool to room temperature.
  7. Refrigerate for at least 2 hours or until set.
  8. Garnish with reserved mango pieces before serving.
