  • Chicken broth - 500 ml
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Green onions, chopped - 2 stalks
  • Salt - to taste
  • Cilantro, for garnish - a handful

Steps

  1. 1. Begin by preparing the rice noodles according to package instructions, then drain and set aside.
  2. 2. Slice the chicken thigh into bite-sized pieces and cut the tofu into cubes.
  3. 3. In a large pot, heat vegetable oil over medium heat. Add minced garlic, ginger, Sichuan peppercorns, and dried red chilies. Sauté until fragrant.
  4. 4. Add the chicken pieces to the pot and cook until they are browned and cooked through, about 5-7 minutes.
  5. 5. Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for 10 minutes.
