- Soy sauce - 2 tablespoons

- Green onions, chopped - 2 stalks
- Salt - to taste
- Cilantro, for garnish - a handful
Steps
- 1. Begin by preparing the rice noodles according to package instructions, then drain and set aside.
- 2. Slice the chicken thigh into bite-sized pieces and cut the tofu into cubes.
- 3. In a large pot, heat vegetable oil over medium heat. Add minced garlic, ginger, Sichuan peppercorns, and dried red chilies. Sauté until fragrant.
- 4. Add the chicken pieces to the pot and cook until they are browned and cooked through, about 5-7 minutes.
- 5. Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for 10 minutes.
- 6. Add the Chinese cabbage, mushrooms, and soy sauce to the pot. Cook for an additional 5 minutes until the vegetables are tender.
- 7. Gently stir in the tofu and cooked rice noodles, allowing them to heat through for about 2-3 minutes.
- 8. Drizzle sesame oil over the dish, and adjust salt to taste.
- 9. Serve hot, garnished with chopped green onions and cilantro.
