  • Dried red chilies - 5-6 (adjust to taste)
  • Garlic - 4 cloves (minced)
  • Ginger - 1 inch (sliced)
  • Spring onions - 2 (chopped)
  • Soy sauce - 3 tablespoons
  • Chili oil - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Water - 150 ml
  • Cilantro - for garnish

Steps

  1. Heat vegetable oil in a large wok or pan over medium heat.
  2. Add Sichuan peppercorns and dried red chilies to the oil and stir-fry for about 1 minute until fragrant.
  3. Add minced garlic and sliced ginger to the pan, stirring for another minute until aromatic.
  4. Increase the heat and add the crab pieces to the wok, stirring continuously for about 5 minutes until they turn bright orange.
  5. In a small bowl, mix soy sauce, chili oil, cornstarch, and water to create a sauce mixture.
  6. Pour the sauce mixture over the crab, ensuring it's well coated, and stir-fry for another 5-7 minutes until the sauce thickens.
  7. Add chopped spring onions and salt to taste, mix well, and cook for an additional 2 minutes.
  8. Serve hot, garnished with fresh cilantro.
