- Tofu - 200 grams, firm
- Red bell pepper - 1 medium, cut into chunks
- Zucchini - 1 medium, sliced
- Mushrooms - 100 grams, halved
- Sesame oil - 2 tablespoons
- Soy sauce - 2 tablespoons
- Chili oil - 1 tablespoon
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Sichuan peppercorns - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Salt - to taste
- Skewers - 4 (soaked in water if wooden)
Steps
- In a bowl, combine sesame oil, soy sauce, chili oil, minced garlic, grated ginger, Sichuan peppercorns, coriander powder, cumin powder, and salt to create the marinade.
- Cut the tofu into cubes and add it to the marinade, ensuring all pieces are coated. Let it marinate for at least 15 minutes.
- While the tofu marinates, prepare the vegetables by cutting the red bell pepper, zucchini, and mushrooms into bite-sized pieces.
- After marinating, thread the tofu and vegetables alternately onto the skewers.
- Preheat a grill or grill pan over medium-high heat. Lightly oil the grill grates to prevent sticking.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the tofu is golden and vegetables are tender.
- Remove from the grill, let cool for a minute, and serve hot with any remaining marinade for dipping.
