Ingredients

  • Tofu - 200 grams, firm
  • Red bell pepper - 1 medium, cut into chunks
  • Zucchini - 1 medium, sliced
  • Mushrooms - 100 grams, halved
  • Sesame oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Chili oil - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Sichuan peppercorns - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. In a bowl, combine sesame oil, soy sauce, chili oil, minced garlic, grated ginger, Sichuan peppercorns, coriander powder, cumin powder, and salt to create the marinade.
  2. Cut the tofu into cubes and add it to the marinade, ensuring all pieces are coated. Let it marinate for at least 15 minutes.
  3. While the tofu marinates, prepare the vegetables by cutting the red bell pepper, zucchini, and mushrooms into bite-sized pieces.
  4. After marinating, thread the tofu and vegetables alternately onto the skewers.
  5. Preheat a grill or grill pan over medium-high heat. Lightly oil the grill grates to prevent sticking.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the tofu is golden and vegetables are tender.
  7. Remove from the grill, let cool for a minute, and serve hot with any remaining marinade for dipping.
