  • Green onions (chopped) - 2 tablespoons

  • Chili oil - 1 tablespoon
  • Salt - to taste
  • Sugar - 1 teaspoon
  • Cornstarch - 1 tablespoon
  • Water - 50 milliliters

Steps

  1. In a bowl, combine shrimp with cornstarch, soy sauce, and salt. Mix well and let marinate for 10 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add Sichuan peppercorns and dried red chilies to the hot oil, stirring for about 30 seconds until fragrant.
  4. Add minced garlic and ginger to the skillet, stirring for another 30 seconds.
  5. Increase the heat to high and add the marinated shrimp to the skillet. Stir-fry for about 3-4 minutes until the shrimp turn pink and are cooked through.
  6. Stir in the sugar, chili oil, and water, mixing well to coat the shrimp evenly.
  7. Add chopped green onions and stir for an additional minute before removing from heat.
  8. Serve hot with steamed rice or gluten-free noodles.
