  • Sesame oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Chili oil - 1 tablespoon
  • Sichuan peppercorns - 1 teaspoon, toasted and ground
  • Garlic - 2 cloves, minced
  • Lime juice - 2 tablespoons
  • Peanut butter - 1 tablespoon
  • Sugar - 1 teaspoon

Steps

  1. Cook the rice noodles according to package instructions, then drain and rinse under cold water to stop the cooking process.
  2. In a large bowl, combine the cucumber, carrot, red bell pepper, scallions, and cilantro.
  3. In a separate bowl, whisk together the sesame oil, soy sauce, chili oil, ground Sichuan peppercorns, minced garlic, lime juice, peanut butter, and sugar until smooth.
