- Spinach - 100 grams, fresh
- Eggs - 2, lightly beaten
- Cornstarch - 1 tablespoon (for thickening)
- Black pepper - to taste
Steps
- In a pot, bring the chicken broth to a simmer over medium heat.
- Add the grated ginger, minced garlic, soy sauce, and sesame oil to the broth, stirring to combine.
- Add the sliced mushrooms and julienned carrot to the pot, allowing them to cook for about 5 minutes until tender.
- Meanwhile, cook the rice noodles according to package instructions, then drain and set aside.
- In a small bowl, mix the cornstarch with a little cold water to create a slurry, then stir it into the simmering broth to thicken slightly.
- Add the spinach to the pot and cook until wilted, about 2 minutes.
- Pour the beaten eggs into the simmering broth, stirring gently to create ribbons of egg.
- Season with black pepper to taste, then add the cooked rice noodles and stir to combine.
- Serve hot, garnished with chopped green onions.
