  • Green onions - 2, chopped
  • Carrot - 1 small, julienned
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Spinach - 100 grams, fresh
  • Eggs - 2, lightly beaten
  • Cornstarch - 1 tablespoon (for thickening)
  • Black pepper - to taste

Steps

  1. In a pot, bring the chicken broth to a simmer over medium heat.
  2. Add the grated ginger, minced garlic, soy sauce, and sesame oil to the broth, stirring to combine.
  3. Add the sliced mushrooms and julienned carrot to the pot, allowing them to cook for about 5 minutes until tender.
  4. Meanwhile, cook the rice noodles according to package instructions, then drain and set aside.
  5. In a small bowl, mix the cornstarch with a little cold water to create a slurry, then stir it into the simmering broth to thicken slightly.
  6. Add the spinach to the pot and cook until wilted, about 2 minutes.
  7. Pour the beaten eggs into the simmering broth, stirring gently to create ribbons of egg.
  8. Season with black pepper to taste, then add the cooked rice noodles and stir to combine.
  9. Serve hot, garnished with chopped green onions.
