- Spring onions - 2, chopped
- Mushrooms (shiitake or button) - 100 grams, sliced
- Spinach - 100 grams
- Cilantro - a handful, chopped
- Chili flakes - 1/2 teaspoon (optional)
- Lime - 1, cut into wedges
Steps
- Prepare the rice noodles according to package instructions, then drain and set aside.
- In a pot, heat sesame oil over medium heat and sauté minced garlic and grated ginger until fragrant, about 1 minute.
- Add the sliced mushrooms and cook for another 3-4 minutes until softened.
- Pour in the vegetable broth and soy sauce, and bring to a gentle simmer.
- Add the chopped spring onions and spinach to the broth, and cook for 2-3 minutes until the spinach wilts.
- Divide the cooked rice noodles into two bowls and ladle the hot broth and vegetables over the noodles.
- Garnish with chopped cilantro, chili flakes if using, and serve with lime wedges on the side.
