  • Rice noodles - 100 grams
  • Vegetable broth - 500 ml
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Spring onions - 2, chopped
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Spinach - 100 grams
  • Cilantro - a handful, chopped
  • Chili flakes - 1/2 teaspoon (optional)
  • Lime - 1, cut into wedges

Steps

  1. Prepare the rice noodles according to package instructions, then drain and set aside.
  2. In a pot, heat sesame oil over medium heat and sauté minced garlic and grated ginger until fragrant, about 1 minute.
  3. Add the sliced mushrooms and cook for another 3-4 minutes until softened.
  4. Pour in the vegetable broth and soy sauce, and bring to a gentle simmer.
  5. Add the chopped spring onions and spinach to the broth, and cook for 2-3 minutes until the spinach wilts.
  6. Divide the cooked rice noodles into two bowls and ladle the hot broth and vegetables over the noodles.
  7. Garnish with chopped cilantro, chili flakes if using, and serve with lime wedges on the side.
