Ingredients

  • Daikon radish - 300 grams

  • Tapioca starch - 50 grams

  • Green onions - 2 stalks, finely chopped
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Mushrooms (shiitake or button) - 50 grams, finely chopped
  • Egg whites - 2 large
  • Salt - 1/2 teaspoon

Steps

  1. Grate the daikon radish and place it in a bowl. Add a pinch of salt and let it sit for 10-15 minutes to draw out excess moisture.
  2. After 15 minutes, squeeze the grated radish in a clean cloth to remove excess water. Set aside.
  3. In a large mixing bowl, combine rice flour, tapioca starch, and water. Mix until smooth.
  4. Add the grated radish, chopped green onions, finely chopped mushrooms, soy sauce, sesame oil, black pepper, and egg whites to the mixture. Stir until well combined.
  5. Prepare a steaming dish by lightly greasing it. Pour the mixture into the dish, smoothing the top.
  6. Place the dish in a steamer and steam for about 30-35 minutes, or until the cake is firm and cooked through.
  7. Remove from the steamer and let it cool slightly. Once cool, you can slice it into pieces.
  8. Optional: Pan-fry the slices in a little oil until golden brown on both sides before serving.
