Steps
- Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 30 minutes, then drain.
- In a separate bowl, soak the lotus seeds in water for 30 minutes. If using dried lotus seeds, ensure you check if they need to be pre-cooked or soaked longer.
- In a pot, combine the soaked glutinous rice, soaked lotus seeds, and 800 ml of fresh water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low and simmer for about 30-35 minutes, stirring occasionally until the mixture is creamy and the rice and lotus seeds are tender.
- Add rock sugar and a pinch of salt to the porridge, stirring until the sugar fully dissolves. Allow it to simmer for an additional 5 minutes.
- Remove from heat and let it sit for a few minutes to thicken slightly.
- Serve warm, garnished with goji berries and chopped nuts.
