Ingredients

  • Lotus seeds - 50 grams
  • Glutinous rice - 100 grams
  • Water - 800 ml
  • Rock sugar - 20 grams (adjust to taste)
  • Salt - a pinch
  • Goji berries - 20 grams (for garnish)
  • Chopped nuts (e.g., almonds or walnuts) - 15 grams (for garnish)

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 30 minutes, then drain.
  2. In a separate bowl, soak the lotus seeds in water for 30 minutes. If using dried lotus seeds, ensure you check if they need to be pre-cooked or soaked longer.
  3. In a pot, combine the soaked glutinous rice, soaked lotus seeds, and 800 ml of fresh water. Bring to a boil over medium heat.
  4. Once boiling, reduce the heat to low and simmer for about 30-35 minutes, stirring occasionally until the mixture is creamy and the rice and lotus seeds are tender.
  5. Add rock sugar and a pinch of salt to the porridge, stirring until the sugar fully dissolves. Allow it to simmer for an additional 5 minutes.
  6. Remove from heat and let it sit for a few minutes to thicken slightly.
  7. Serve warm, garnished with goji berries and chopped nuts.
