Ingredients
- All-purpose flour - 150 grams
- Coconut oil - 50 grams, solid
- Powdered sugar - 30 grams
- Water - 50 ml
- Lotus seeds - 100 grams, cooked and mashed
- Maple syrup - 30 grams
- Sesame oil - 5 ml
- Salt - 1 gram
- Cornstarch - 10 grams
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the all-purpose flour and salt. Add the solid coconut oil and mix until crumbly.
- Gradually add water to the flour mixture, kneading until a smooth dough forms. Wrap in plastic wrap and let it rest for 20 minutes.
- In another bowl, mix the cooked and mashed lotus seeds with maple syrup, sesame oil, and cornstarch until well combined to create the filling.
- Divide the rested dough into 4 equal pieces. Roll each piece into a circle, about 5 mm thick.
- Place a spoonful of the lotus seed filling in the center of each dough circle, then fold the edges over to seal and shape into a small ball or pastry.
- Place the pastries on a baking tray lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until golden brown.
- Allow the pastries to cool slightly before serving.
