Ingredients

  • All-purpose flour - 150 grams
  • Coconut oil - 50 grams, solid
  • Powdered sugar - 30 grams
  • Water - 50 ml
  • Lotus seeds - 100 grams, cooked and mashed
  • Maple syrup - 30 grams
  • Sesame oil - 5 ml
  • Salt - 1 gram
  • Cornstarch - 10 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the all-purpose flour and salt. Add the solid coconut oil and mix until crumbly.
  3. Gradually add water to the flour mixture, kneading until a smooth dough forms. Wrap in plastic wrap and let it rest for 20 minutes.
  4. In another bowl, mix the cooked and mashed lotus seeds with maple syrup, sesame oil, and cornstarch until well combined to create the filling.
  5. Divide the rested dough into 4 equal pieces. Roll each piece into a circle, about 5 mm thick.
  6. Place a spoonful of the lotus seed filling in the center of each dough circle, then fold the edges over to seal and shape into a small ball or pastry.
  7. Place the pastries on a baking tray lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until golden brown.
  8. Allow the pastries to cool slightly before serving.
