Ingredients

  • Dried lotus seeds - 100 grams
  • Water - 500 ml (for soaking and cooking)
  • Rock sugar - 50 grams
  • Vanilla extract - 1 teaspoon
  • Pinch of salt - 1/8 teaspoon

Steps

  1. Rinse the dried lotus seeds under cold water to remove any impurities.
  2. Soak the lotus seeds in 500 ml of water for at least 4 hours or overnight to soften them.
  3. Drain the soaked lotus seeds and place them in a pot with 300 ml of fresh water. Bring to a boil over medium heat.
  4. Reduce the heat to low and simmer the lotus seeds for about 30-40 minutes until they are tender.
  5. Once cooked, drain any excess water and transfer the lotus seeds to a blender.
  6. Add the rock sugar, vanilla extract, and a pinch of salt to the blender. Blend until smooth, adding a little water if necessary to achieve a creamy consistency.
  7. Taste the paste and adjust sweetness if desired by adding more sugar.
  8. Transfer the lotus seed paste to a bowl and let it cool. It can be served warm or chilled.
