  • Snow peas - 100 grams, trimmed
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Spring onion - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
  3. Add the sliced lotus root to the skillet and stir-fry for 3-4 minutes until it starts to soften.
  4. Incorporate the julienned carrot and sliced bell pepper, cooking for an additional 3 minutes.
