Ingredients

  • Lotus root - 150 grams, thinly sliced

  • Water - 100 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Baking powder - 1 teaspoon
  • Green onions - 2, finely chopped
  • Bell pepper - 1, diced
  • Carrot - 1, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Chili flakes - 1/2 teaspoon (optional)

Steps

  1. In a mixing bowl, combine all-purpose flour, salt, and baking powder. Gradually add water while stirring to form a dough.
  2. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the lotus root slices and sauté for 5-7 minutes until they start to soften. Remove from heat and set aside.
  4. In the same skillet, add the remaining olive oil and sauté the diced bell pepper and grated carrot until they are tender, about 3-4 minutes. Stir in the chopped green onions, soy sauce, sesame oil, and chili flakes, then remove from heat.
  5. Divide the rested dough into two equal portions. Roll each portion into a circle about 1/4 inch thick.
  6. Heat a non-stick skillet over medium heat. Cook each flatbread for 3-4 minutes on each side until golden brown.
  7. Top each flatbread with the sautéed lotus root and vegetable mixture. Cook for an additional 2 minutes until heated through.
  8. Slice and serve warm, garnished with extra green onions if desired.
