  • Cornstarch - 1 tablespoon
  • Chili oil - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Red bell pepper - 1, diced
  • Snow peas - 100 grams, trimmed
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a large pan, heat the chili oil over medium heat. Add minced garlic and ginger, sauté until fragrant, about 1 minute.
  2. Add the sliced lotus root and diced red bell pepper to the pan, stir-frying for about 5 minutes until the vegetables start to soften.
  3. Stir in the shredded king oyster mushrooms and snow peas, cooking for another 5 minutes until they are tender.
  4. Add the crumbled tofu, soy sauce, and vegetable broth to the pan. Stir well and let simmer for 5 minutes to combine the flavors.
  5. In a small bowl, mix cornstarch with a few tablespoons of water to create a slurry, then add it to the pan to thicken the sauce. Stir continuously until the sauce is thickened, about 2-3 minutes.
