Steps
- Wash the lotus root thoroughly under running water to remove any dirt.
- Peel the lotus root with a vegetable peeler and slice it into thin rounds (about 2-3 mm thick).
- In a bowl, combine the sliced lotus root with salt, cayenne pepper, and garlic powder. Toss until evenly coated.
- Heat vegetable oil in a deep frying pan over medium-high heat until it reaches 180°C (350°F).
- Carefully add the coated lotus root slices to the hot oil in batches, making sure not to overcrowd the pan.
- Fry the chips for about 3-5 minutes, or until they turn golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
