- Cornstarch - 2 tablespoons

- Lettuce leaves - 2
- Cucumber - 1/2, sliced
- Vegan mayonnaise - 2 tablespoons
Steps
- Peel and slice the lotus root into thin rounds. Boil in salted water for about 5 minutes until slightly tender, then drain and let cool.
- In a mixing bowl, combine the cooked quinoa, grated carrot, chopped green onion, minced garlic, soy sauce, sesame oil, cornstarch, salt, and pepper.
- Add the cooled lotus root slices to the mixture and mash slightly to form a cohesive mixture, making sure to leave some chunks for texture.
- Form the mixture into two equal patties.
- Heat a non-stick pan over medium heat and lightly oil it. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
- Toast the burger buns lightly in the same pan.
