Ingredients

  • All-purpose flour - 150 grams
  • Salt - 1/2 teaspoon
  • Butter - 75 grams, chilled and cubed
  • Cold water - 3-4 tablespoons
  • Lotus root - 100 grams, thinly sliced
  • Green peas - 100 grams, fresh or frozen
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Black sesame seeds - 1 tablespoon, for garnish
  • Spring onion - 1, finely chopped, for garnish

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Add the chilled butter and rub it into the flour until the mixture resembles coarse crumbs.
  2. Gradually add the cold water, one tablespoon at a time, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. In a skillet, heat a small amount of oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant.
  4. Add the sliced lotus root and peas to the skillet. Stir in the soy sauce and sesame oil, cooking for about 5-7 minutes until the lotus root is tender but still crunchy. Remove from heat and let cool slightly.
  5. Preheat the oven to 180°C (350°F). Roll out the chilled dough on a floured surface to fit a tart pan. Press the dough into the tart pan and trim any excess.
  6. Spread the lotus root and pea mixture evenly over the tart crust.
  7. Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown.
  8. Remove from the oven, garnish with black sesame seeds and chopped spring onion. Allow to cool slightly before slicing and serving.
