- Lotus root - 100 grams, thinly sliced
- Green peas - 100 grams, fresh or frozen
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Black sesame seeds - 1 tablespoon, for garnish
- Spring onion - 1, finely chopped, for garnish
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Add the chilled butter and rub it into the flour until the mixture resembles coarse crumbs.
- Gradually add the cold water, one tablespoon at a time, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- In a skillet, heat a small amount of oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant.
- Add the sliced lotus root and peas to the skillet. Stir in the soy sauce and sesame oil, cooking for about 5-7 minutes until the lotus root is tender but still crunchy. Remove from heat and let cool slightly.
- Preheat the oven to 180°C (350°F). Roll out the chilled dough on a floured surface to fit a tart pan. Press the dough into the tart pan and trim any excess.
- Spread the lotus root and pea mixture evenly over the tart crust.
- Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown.
- Remove from the oven, garnish with black sesame seeds and chopped spring onion. Allow to cool slightly before slicing and serving.
