- Lotus root - 200 grams, thinly sliced
- Frozen peas - 100 grams
- All-purpose flour - 200 grams
- Butter - 50 grams, cold and diced
- Cold water - 60 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Sesame oil - 1 tablespoon
- Chopped green onions - 2 tablespoons
- Soy sauce - 1 tablespoon
- Cornstarch - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the all-purpose flour and salt. Add the cold diced butter and rub it into the flour until the mixture resembles coarse crumbs.
- Gradually add the cold water, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
- In a pan, heat sesame oil over medium heat. Add the lotus root slices and cook for 5 minutes until slightly tender.
- Add the frozen peas, chopped green onions, soy sauce, black pepper, and cornstarch. Stir well and cook for an additional 5 minutes until everything is heated through. Remove from heat and let cool.
- Roll out the chilled dough on a floured surface to fit your pie dish. Place the dough in the dish and trim the edges.
- Pour the lotus root and pea mixture into the pie crust, spreading it evenly.
- Roll out a second piece of dough for the top crust and place it over the filling. Seal the edges and make a few slits on top for steam to escape.
- Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown.
- Remove from the oven, let cool for a few minutes, then slice and serve.
