Ingredients

  • Lotus root - 200 grams, thinly sliced
  • Frozen peas - 100 grams
  • All-purpose flour - 200 grams
  • Butter - 50 grams, cold and diced
  • Cold water - 60 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sesame oil - 1 tablespoon
  • Chopped green onions - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Cornstarch - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the all-purpose flour and salt. Add the cold diced butter and rub it into the flour until the mixture resembles coarse crumbs.
  3. Gradually add the cold water, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. In a pan, heat sesame oil over medium heat. Add the lotus root slices and cook for 5 minutes until slightly tender.
  5. Add the frozen peas, chopped green onions, soy sauce, black pepper, and cornstarch. Stir well and cook for an additional 5 minutes until everything is heated through. Remove from heat and let cool.
  6. Roll out the chilled dough on a floured surface to fit your pie dish. Place the dough in the dish and trim the edges.
  7. Pour the lotus root and pea mixture into the pie crust, spreading it evenly.
  8. Roll out a second piece of dough for the top crust and place it over the filling. Seal the edges and make a few slits on top for steam to escape.
  9. Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown.
  10. Remove from the oven, let cool for a few minutes, then slice and serve.
