Ingredients

  • Ground pork - 500 grams
  • Green onions - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Coconut aminos - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Egg - 1, beaten
  • Cauliflower rice - 200 grams
  • Bok choy - 200 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 1/2 cup

Steps

  1. In a large mixing bowl, combine the ground pork, chopped green onions, minced garlic, grated ginger, coconut aminos, sesame oil, beaten egg, salt, and black pepper. Mix until well combined.
  2. Form the mixture into 4 large meatballs, about 125 grams each, and set aside.
  3. In a large skillet, heat a tablespoon of sesame oil over medium heat. Add the meatballs and sear them on all sides until browned, about 5-7 minutes.
  4. Once browned, remove the meatballs from the skillet and set aside. In the same skillet, add chopped bok choy and sauté for 3-4 minutes until wilted.
  5. Add the cauliflower rice and water to the skillet, stirring to combine. Place the meatballs on top of the mixture, cover the skillet, and let it simmer on low heat for 15-20 minutes until the meatballs are cooked through.
  6. Serve the meatballs on a bed of cauliflower rice and bok choy, garnished with additional chopped green onions if desired.
