Ingredients
- Brown rice - 150 grams
- Fresh corn kernels - 150 grams
- Chicken broth - 300 ml
- Garlic - 3 cloves, minced
- Green onions - 2 stalks, chopped
- Olive oil - 1 tablespoon
- Sea salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cilantro - for garnish
Steps
- Rinse the brown rice under cold water until the water runs clear, then drain.
- In a medium-sized pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the rinsed brown rice to the pot and stir to coat the rice with the garlic oil.
- Pour in the chicken broth, and add the sea salt and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 30 minutes or until the rice is tender and the liquid is absorbed.
- In the last 5 minutes of cooking, stir in the fresh corn kernels and half of the chopped green onions.
- Remove from heat, fluff the rice with a fork, and let it sit covered for an additional 5 minutes.
- Serve warm, garnished with the remaining green onions and fresh cilantro.
