Ingredients

  • Brown rice - 150 grams
  • Fresh corn kernels - 150 grams
  • Chicken broth - 300 ml
  • Garlic - 3 cloves, minced
  • Green onions - 2 stalks, chopped
  • Olive oil - 1 tablespoon
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cilantro - for garnish

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then drain.
  2. In a medium-sized pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the rinsed brown rice to the pot and stir to coat the rice with the garlic oil.
  4. Pour in the chicken broth, and add the sea salt and black pepper. Bring to a boil.
  5. Once boiling, reduce the heat to low, cover, and simmer for 30 minutes or until the rice is tender and the liquid is absorbed.
  6. In the last 5 minutes of cooking, stir in the fresh corn kernels and half of the chopped green onions.
  7. Remove from heat, fluff the rice with a fork, and let it sit covered for an additional 5 minutes.
  8. Serve warm, garnished with the remaining green onions and fresh cilantro.
