Ingredients

  • Cauliflower rice - 300 grams
  • Cucumber - 1 medium, diced
  • Carrot - 1 medium, grated
  • Red bell pepper - 1 medium, diced
  • Green onions - 2, finely chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Sesame oil - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Coconut aminos - 1 tablespoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Start by preparing the cauliflower rice. Grate the cauliflower using a box grater or food processor until it resembles rice grains.
  2. In a large skillet, heat 1 tablespoon of sesame oil over medium heat. Add the cauliflower rice and sauté for 5-7 minutes until tender. Season with salt and pepper to taste.
  3. Once cooked, transfer the cauliflower rice to a bowl and let it cool to room temperature.
  4. While the rice cools, prepare the vegetables. Dice the cucumber, grate the carrot, and dice the red bell pepper. Finely chop the green onions and cilantro.
  5. In a small bowl, whisk together the remaining sesame oil, rice vinegar, coconut aminos, minced garlic, and grated ginger to create the dressing.
  6. Once the cauliflower rice is cool, add the diced cucumber, grated carrot, diced red bell pepper, green onions, and cilantro to the bowl. Pour the dressing over the mixture and toss well to combine.
