Ingredients

  • Red lentils - 100 grams
  • Vegetable broth - 500 ml
  • Water - 200 ml
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Green onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Coriander - 1 teaspoon, ground
  • Cumin - 1 teaspoon, ground
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the red lentils under cold water until the water runs clear, then set aside.
  2. In a pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1-2 minutes.
  3. Add the diced carrot and celery to the pot and cook for another 3-4 minutes, stirring occasionally.
  4. Stir in the rinsed lentils, vegetable broth, and water. Bring to a boil.
  5. Once boiling, reduce the heat to low, cover, and let it simmer for about 20 minutes, or until the lentils are tender.
  6. Add the soy sauce, ground coriander, ground cumin, salt, and black pepper to taste. Stir to combine and cook for an additional 2-3 minutes.
  7. Remove from heat and serve hot, garnished with chopped green onions and fresh cilantro.
