- Red lentils - 100 grams
- Vegetable broth - 500 ml
- Water - 200 ml
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Green onions - 2, chopped
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Coriander - 1 teaspoon, ground
- Cumin - 1 teaspoon, ground
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the red lentils under cold water until the water runs clear, then set aside.
- In a pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1-2 minutes.
- Add the diced carrot and celery to the pot and cook for another 3-4 minutes, stirring occasionally.
- Stir in the rinsed lentils, vegetable broth, and water. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 20 minutes, or until the lentils are tender.
- Add the soy sauce, ground coriander, ground cumin, salt, and black pepper to taste. Stir to combine and cook for an additional 2-3 minutes.
- Remove from heat and serve hot, garnished with chopped green onions and fresh cilantro.
