- Sesame oil - 1 tablespoon

- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
Steps
- Rinse the red lentils under cold water and cook them in a pot with 250 ml of water for about 15 minutes or until soft. Drain any excess water and allow to cool slightly.
- In a mixing bowl, combine the cooked lentils, flour, water, soy sauce, sesame oil, salt, and black pepper. Mix until a smooth batter forms.
- Fold in the chopped scallions until evenly distributed in the batter.
- Heat a non-stick skillet over medium heat and add a tablespoon of vegetable oil.
- Pour half of the lentil batter into the skillet, spreading it evenly to form a pancake. Cook for about 4-5 minutes or until the bottom is golden brown.
- Carefully flip the pancake and cook for an additional 4-5 minutes until the second side is golden and crispy.
- Remove the pancake from the skillet and repeat with the remaining batter, adding more oil as needed.
- Cut the pancakes into quarters and serve warm as a burger with your choice of toppings.
