Ingredients

  • Red lentils - 100 grams
  • Scallions - 4, finely chopped
  • All-purpose flour - 100 grams
  • Water - 150 ml
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying

Steps

  1. Rinse the red lentils under cold water and cook them in a pot with 250 ml of water for about 15 minutes or until soft. Drain any excess water and allow to cool slightly.
  2. In a mixing bowl, combine the cooked lentils, flour, water, soy sauce, sesame oil, salt, and black pepper. Mix until a smooth batter forms.
  3. Fold in the chopped scallions until evenly distributed in the batter.
  4. Heat a non-stick skillet over medium heat and add a tablespoon of vegetable oil.
  5. Pour half of the lentil batter into the skillet, spreading it evenly to form a pancake. Cook for about 4-5 minutes or until the bottom is golden brown.
  6. Carefully flip the pancake and cook for an additional 4-5 minutes until the second side is golden and crispy.
  7. Remove the pancake from the skillet and repeat with the remaining batter, adding more oil as needed.
  8. Cut the pancakes into quarters and serve warm as a burger with your choice of toppings.
