- Lime juice - 1 tablespoon
- Coconut milk - 2 tablespoons
- Peanut butter - 3 tablespoons
- Chili flakes - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Skewers - 4 (soaked in water if wooden)
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into 1-inch cubes.
- In a bowl, combine the chopped lemongrass, minced garlic, soy sauce, maple syrup, lime juice, coconut milk, salt, and black pepper to create a marinade.
- Add the tofu cubes to the marinade and let them soak for at least 15 minutes, stirring occasionally.
- Preheat a grill or grill pan over medium heat.
- Thread the marinated tofu onto the soaked skewers.
- Grill the skewers for about 6-8 minutes on each side, or until they are golden brown and slightly charred.
- While the tofu is grilling, prepare the peanut sauce by mixing peanut butter, chili flakes, a splash of water, and a pinch of salt in a small bowl until smooth.
