- Chicken breast, boneless and skinless - 200 grams
- Fresh lemongrass, minced - 2 tablespoons

- Ginger, grated - 1 teaspoon
- Soy sauce - 2 tablespoons
- Honey - 1 tablespoon
- Olive oil - 1 tablespoon
- Red bell pepper, thinly sliced - 1/2
- Carrot, julienned - 1 small
- Green onions, chopped - 2 tablespoons
- Mozzarella cheese, shredded - 100 grams
- Fresh cilantro, for garnish - 2 tablespoons
Steps
- Preheat the oven to 220°C (428°F).
- In a bowl, mix the minced lemongrass, garlic, ginger, soy sauce, honey, and olive oil to create a marinade.
- Cut the chicken breast into thin strips and add them to the marinade. Let it marinate for at least 15 minutes.
- While the chicken is marinating, roll out the whole wheat pizza dough on a floured surface to your desired thickness.
- Place the rolled-out dough on a baking sheet lined with parchment paper.
- Pre-bake the crust in the preheated oven for 5 minutes to give it a head start.
- In a skillet over medium heat, cook the marinated chicken for about 5-7 minutes until fully cooked and slightly caramelized.
- Remove the crust from the oven and spread the cooked chicken evenly over the surface.
- Top with sliced red bell pepper, julienned carrot, and shredded mozzarella cheese.
- Return the pizza to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
