Ingredients

  • Whole wheat pizza dough - 250 grams
  • Chicken breast, boneless and skinless - 200 grams
  • Fresh lemongrass, minced - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Soy sauce - 2 tablespoons
  • Honey - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Red bell pepper, thinly sliced - 1/2
  • Carrot, julienned - 1 small
  • Green onions, chopped - 2 tablespoons
  • Mozzarella cheese, shredded - 100 grams
  • Fresh cilantro, for garnish - 2 tablespoons

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a bowl, mix the minced lemongrass, garlic, ginger, soy sauce, honey, and olive oil to create a marinade.
  3. Cut the chicken breast into thin strips and add them to the marinade. Let it marinate for at least 15 minutes.
  4. While the chicken is marinating, roll out the whole wheat pizza dough on a floured surface to your desired thickness.
  5. Place the rolled-out dough on a baking sheet lined with parchment paper.
  6. Pre-bake the crust in the preheated oven for 5 minutes to give it a head start.
  7. In a skillet over medium heat, cook the marinated chicken for about 5-7 minutes until fully cooked and slightly caramelized.
  8. Remove the crust from the oven and spread the cooked chicken evenly over the surface.
  9. Top with sliced red bell pepper, julienned carrot, and shredded mozzarella cheese.
  10. Return the pizza to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
  11. Remove from the oven, garnish with chopped green onions and fresh cilantro, and let it cool for a couple of minutes before slicing.
